Preparing the Pork

    Marinate the Pork

    In a large bowl, combine the achiote paste, Seville orange juice, minced garlic, oregano, cumin, salt, and black pepper. Mix well to create a marinade.

    Coat the Pork

    Cut the pork shoulder into large chunks and add it to the marinade. Ensure the pork is fully coated. Cover the bowl and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Slow Roast the Pork

    Preheat your oven to 150°C (300°F). Place the marinated pork in a roasting pan, cover with foil, and roast for about 4-5 hours until the pork is tender and easily shreds with a fork.

Preparing the Pickled Red Onions

    Slice the Onions

    Thinly slice the red onions and place them in a heatproof bowl.

    Combine Pickling Ingredients

    In a small saucepan, combine the white vinegar, sugar, salt, and water. Bring to a simmer over medium heat, stirring until the sugar and salt are dissolved.

    Pickle the Onions

    Pour the hot vinegar mixture over the sliced onions in the bowl. Let them sit for at least 30 minutes to pickle before serving.
