Cilantro Infused Gin

Infuse the Gin
In a clean glass jar, combine the Hendrick's Gin and fresh cilantro leaves. Seal the jar tightly and let it sit at room temperature for 24-48 hours. The longer it sits, the more pronounced the cilantro flavor will be. After infusing, strain the gin through a fine mesh strainer to remove the cilantro leaves.

Prepare the Cilantro Syrup
In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved. Add the fresh cilantro leaves and bring the mixture to a gentle simmer. Let it simmer for about 10 minutes. Remove from heat and let it cool completely. Strain the syrup through a fine mesh strainer to remove the cilantro leaves. Store in a sealed container in the refrigerator.

Mix the Gimlet
In a cocktail shaker, combine the cilantro infused gin, fresh lime juice, and cilantro syrup. Fill the shaker with ice cubes. Shake vigorously for about 15 seconds until well chilled.

Strain the mixture into a chilled cocktail glass. Garnish with a few cilantro leaves on top. Serve immediately and enjoy your refreshing Cilantro Gimlet!
