Mix in Flour
Once boiling, remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Add Eggs
Allow the dough to cool for a few minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Prepare for Frying
In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Pipe Churros
Transfer the dough to a piping bag fitted with a large star tip. Pipe 4-6 inch long strips of dough into the hot oil, cutting them with scissors as needed.

Fry Churros
Fry the churros until golden brown, about 2-3 minutes per side. Remove them with a slotted spoon and drain on paper towels.

Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Melt Chocolate
Remove the saucepan from heat and add the semi-sweet chocolate chips. Let sit for a minute, then stir until smooth and fully melted.

Stir in the vanilla extract until well combined.
