Pork Belly Preparation

    Prepare the Pork Belly

    Score the pork belly skin in a crosshatch pattern, making sure not to cut into the meat. This will help the fat render and create crispy skin.

    Season the Pork

    Rub the pork belly generously with salt, black pepper, garlic powder, and cumin. Ensure to get the seasoning into the scored areas.

    Boil the Pork

    Place the seasoned pork belly in a large pot and cover it with water. Bring it to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 1 hour.

    Let it Cool

    After simmering, remove the pork belly from the pot and let it cool completely. Once cooled, refrigerate it for at least 1 hour or until firm.

    Fry the Pork

    In a large skillet or frying pan, heat oil over medium-high heat. Cut the pork belly into bite-sized pieces and fry them in batches until golden brown and crispy, about 5-7 minutes on each side.

    Remove the stems from the jalapeños and garlic cloves. You can leave the seeds in for extra heat or remove them if you prefer a milder sauce.

    In a blender, combine the jalapeños, garlic, white vinegar, sugar, and salt. Blend until smooth. Taste and adjust seasoning if needed.

    Transfer the hot sauce to a clean jar or bottle and let it sit for at least 30 minutes to allow the flavors to meld. It can be stored in the fridge for up to 2 weeks.
