Preparing the Salad Base

Prepare the Lettuce
Remove any wilted outer leaves from the baby iceberg lettuce. Cut the head into quarters and rinse under cold water. Pat dry with paper towels.

Chop the Tomato
Dice the large tomato into small cubes, discarding the seeds.

Chop the Cilantro
Rinse the cilantro thoroughly, remove the leaves from the stems, and chop finely.

Prepare the Crispy Onions
If using store-bought crispy onions, set aside. If making your own, thinly slice onions, coat with flour, and fry in hot oil until golden brown. Drain on paper towels.
Making the Dressing

Prepare the Tomatillo
Remove the husks from the tomatillos and rinse them under water. Chop them into small pieces.

Combine Ingredients
In a large serving bowl, place the quartered iceberg lettuce, diced tomato, and chopped cilantro. Add the crumbled bacon, blue cheese, and crispy onions on top.

Drizzle the tomatillo dressing generously over the salad and toss gently to combine all ingredients.
