Flatbread

Make the Flatbread Dough
In a mixing bowl, combine all-purpose flour, salt, and baking powder. Mix well.

Add Wet Ingredients
Add olive oil and warm water to the dry ingredients. Mix until a dough forms.

Knead and Rest
Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 30 minutes.

Roll Out
Divide the dough into 4 pieces, roll each into a flat circle about ¼ inch thick.

Cook Flatbreads
Heat a non-stick skillet over medium heat. Cook each flatbread for 2-3 minutes on each side until lightly golden.

Marinate the Flank Steak
In a large bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper.

Add flank steak to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Avocados
Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Mash and Mix
Mash the avocado with a fork, then add lime juice, minced garlic, salt, cilantro, and diced tomatoes. Mix until combined.

Pickle the Jalapenos
Add sliced jalapenos to the boiling liquid. Remove from heat and let cool before transferring to a jar.

In a mixing bowl, combine diced pineapple, red onion, chopped cilantro, lime juice, and salt. Mix well.
