Fire Roasted Salsa

Method

Marinate the Meat

    Prepare the Marinade

    In a bowl, mix together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper to create a marinade.

    Marinate the Steak

    Place the flank steak in a resealable plastic bag and pour the marinade over it. Seal the bag, ensuring the meat is well-coated, and refrigerate for at least 1 hour, preferably overnight.

Prepare the Fire Roasted Salsa

    Roast the Vegetables

    Preheat your grill or broiler. Place the tomatoes, onion, and jalapeño on the grill until charred and smoky, turning occasionally. This should take about 10-15 minutes.

    Blend the Salsa

    Remove the roasted vegetables from the grill and let them cool slightly. Chop them coarsely and transfer them to a blender. Add chopped cilantro, lime juice, and salt. Blend until desired consistency is reached.

Cook the Carne Asada

    Grill the Steak

    Preheat the grill to high heat. Remove the flank steak from the marinade and shake off excess. Grill the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Once cooked, remove the steak from the grill and let it rest for 5-10 minutes before slicing.

Serve

    Slice and Garnish

    Thinly slice the carne asada against the grain. Serve with the fire roasted salsa, chopped onions, and chopped cilantro on the side.
