For the Beans

Method

Preparing the Garlic Shrimp

  1. 1

    Sauté the Garlic

In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for about 1-2 minutes until fragrant but not browned.

  2. 2

    Cook the Shrimp

Add the shrimp to the skillet, season with salt and black pepper, and sauté for about 3-4 minutes until the shrimp are pink and opaque. Stir in the lemon juice and chopped parsley before removing from heat.

Cooking the Rice

  1. 3

    Boil the Water

In a medium saucepan, bring 2 cups of water to a boil. Add salt to taste.

  2. 4

    Cook the Rice

Stir in 1 cup of white rice, reduce the heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork and keep covered until ready to serve.

Preparing the Beans

  1. 5

    Heat the Beans

In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.

  2. 6

    Cook the Black Beans

Add the drained black beans and cumin to the skillet. Stir well, season with salt to taste, and cook for about 5 minutes, stirring occasionally until heated through.
