Preparation of Shrimp and Vegetables

    Prepare the Shrimp

    In a large bowl, rinse the shrimp under cold water. Peel and devein the shrimp, removing the shells and tails. Pat them dry with paper towels.

    Chop the Vegetables

    Dice the tomatoes and cucumber into small cubes. Peel the jicama and cut it into thin strips. Set all chopped vegetables aside.

    Juice the Limes

    Cut the limes in half and squeeze the juice into a small bowl, discarding the seeds. Set the lime juice aside.

Cooking the Shrimp

    Cook the Shrimp

    In a skillet over medium heat, add a tablespoon of vegetable oil. Once hot, add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from heat and let cool.

Frying the Saltines

    Fry the Saltines

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. Once the oil is hot, add the saltine crackers in batches. Fry until golden brown and crispy, about 1-2 minutes. Remove and place on paper towels to drain excess oil.

Assembly

    Combine Ingredients

    In a large mixing bowl, combine the cooked shrimp, diced tomatoes, cucumbers, and jicama. Pour the lime juice over the mixture and toss gently to combine all ingredients.
