    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. In another bowl, whisk together the ricotta cheese, eggs, lemon zest, and vanilla extract until well blended. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not over-mix.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium heat to 350°F (175°C). Use a thermometer to check the temperature.

    Fry the Buñuelos

    Once the oil is hot, drop spoonfuls of the batter into the oil, being careful not to overcrowd the pot. Fry until golden brown on both sides, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Dulce De Leche

    Prepare Dulce De Leche

    You can either use a store-bought dulce de leche or make your own by simmering a can of sweetened condensed milk in a pot of water for about 2 to 3 hours, making sure the can is fully submerged in water. Let it cool before using.

Raspberry Sauce

    Make the Raspberry Sauce

    In a saucepan over medium heat, combine the fresh raspberries, sugar, and lemon juice. Cook until the raspberries break down and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let it cool.
