Bunuelos Dough

Make the dough
In a mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well blended.

Let it rest
Cover the dough with a clean cloth and let it rest for about 30 minutes.
Raspberry Filling

Prepare the filling
In a small saucepan over medium heat, combine fresh raspberries, sugar, and lemon juice. Cook until the raspberries break down and the mixture thickens, about 5-7 minutes. Remove from heat and let it cool.
Dulce De Leche

Make Dulce De Leche
To make dulce de leche, place a can of sweetened condensed milk in a pot of simmering water and cook for 2-3 hours, ensuring the can is always submerged in water. Once done, let it cool before using.
Lemon Sorbet

Make the sorbet
In a saucepan, combine water and sugar over medium heat. Stir until sugar dissolves. Remove from heat and add fresh lemon juice. Cool the mixture and then pour it into an ice cream maker, churn according to the manufacturer's instructions until it reaches a sorbet consistency. Freeze until ready to serve.
Frying Bunuelos

Fry the bunuelos
Heat vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, take small portions of dough and flatten them slightly. Fry each bunuelos until golden brown on both sides, about 2-3 minutes. Remove and drain on paper towels.

Once cooled, use a piping bag to fill each bunuelos with raspberry filling and drizzle with dulce de leche before serving.
