Method

Preparing the Fries

  1. 1

    Bake the Fries

Preheat your oven to 425°F (220°C). Spread the frozen French fries on a baking sheet in a single layer. Drizzle with olive oil, garlic powder, paprika, and a pinch of salt. Toss to coat evenly.

  2. 2

    Cook the Fries

Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden and crispy. Remove from oven and set aside.

Making Salsa Roja

  1. 3

    Chop the Ingredients

Dice the tomatoes, onion, and jalapeño. Place them in a medium bowl.

  2. 4

    Mix the Salsa

Add chopped cilantro, lime juice, and salt to the bowl with the diced vegetables. Stir well to combine.

  3. 5

    Let it Sit

Allow the salsa to sit for at least 15 minutes for the flavors to meld together.

Preparing the Burrito

  1. 6

    Scramble the Eggs

In a skillet over medium heat, crack the eggs and season with salt and black pepper. Stir gently until the eggs are fully cooked and scrambled, about 3-5 minutes.

  2. 7

    Assemble the Burrito

On a flour tortilla, place a portion of scrambled eggs, sliced avocado, and a sprinkle of shredded cheese. Add a spoonful of salsa roja on top.

  3. 8

    Roll the Burrito

Fold in the sides of the tortilla and then roll it from the bottom up, securing all the fillings inside.
