Preheat your oven to 425°F (220°C). Spread the frozen French fries on a baking sheet in a single layer. Drizzle with olive oil, garlic powder, paprika, and a pinch of salt. Toss to coat evenly.

Cook the Fries
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden and crispy. Remove from oven and set aside.

Dice the tomatoes, onion, and jalapeño. Place them in a medium bowl.

Allow the salsa to sit for at least 15 minutes for the flavors to meld together.

Assemble the Burrito
On a flour tortilla, place a portion of scrambled eggs, sliced avocado, and a sprinkle of shredded cheese. Add a spoonful of salsa roja on top.

Fold in the sides of the tortilla and then roll it from the bottom up, securing all the fillings inside.
