Method

Prepare the Marinade

    Toast the Dried Chilies

    In a dry skillet over medium heat, toast the guajillo and ancho chilies for about 2-3 minutes until fragrant. Remove from heat and let cool.

    Blend the Marinade

    In a blender, combine the cooled chilies, garlic, cumin, oregano, black peppercorns, salt, and white vinegar. Blend until smooth, adding a little water if necessary to help the blending process.

    Marinate the Meat

    Cut the chuck roast and lamb shank into large chunks. In a large bowl, combine the meat with the marinade and mix well. Cover and refrigerate for at least 4 hours, preferably overnight.

Cook the Birria

    Sear the Meat

    In a large pot or Dutch oven, heat a little oil over medium-high heat. Add the marinated meat and sear on all sides until browned.

    Add Broth and Vegetables

    Add the beef broth, quartered onion, chopped carrots, chopped celery, and bay leaves to the pot. Bring to a boil.

    Simmer

    Reduce the heat to low, cover the pot, and let it simmer for about 3 hours, or until the meat is tender and falling apart.

Serve the Birria

    Prepare Tortillas

    Warm the corn tortillas on a skillet until pliable.

    Assemble the Dish

    Serve the tender meat in bowls, ladle the broth over the top, and garnish with chopped onion, cilantro, lime wedges, and sliced radishes.

    Serve hot with additional lime wedges on the side for squeezing over the birria.
