Prepare the Ribs
Start by rinsing the baby back ribs under cold water. Pat them dry with paper towels. Remove the silver skin from the back of the ribs for better tenderness.

Season the Ribs
Rub the ribs with salt and black pepper on both sides evenly. Set aside.
Marinade

Make the Marinade
In a large bowl, combine pineapple juice, apple cider vinegar, chipotle peppers, minced garlic, oregano, cumin, cinnamon, brown sugar, olive oil, cilantro, lime juice, salt, and black pepper. Whisk until well combined.

Marinate the Ribs
Place the seasoned ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).

Cook to Perfection
Continue grilling the ribs, turning occasionally, for about 25-30 minutes, or until the meat is tender and has an internal temperature of at least 145°F. Optionally, baste the ribs with leftover marinade during the last 10 minutes of grilling.

Remove the ribs from the grill and let them rest for about 5 minutes before slicing. Serve with lime wedges and fresh cilantro if desired.
