Prepare the Arepas

    Mix the Dough

    In a large bowl, combine the pre-cooked cornmeal, warm water, and salt. Mix until a dough forms.

    Form the Arepas

    Divide the dough into 8 equal portions and shape each portion into a disk about 1/2 inch thick.

    Cook the Arepas

    Heat a skillet over medium-high heat and add the vegetable oil. Cook the arepas for about 5-7 minutes on each side, or until golden brown and crispy.

Prepare the Filling

    Cook the Chorizo

    In a large skillet, cook the chorizo over medium heat until browned and cooked through, about 8-10 minutes. Remove from the skillet and set aside.

    Sauté the Mushrooms

    In the same skillet, add olive oil and garlic. Sauté for 1 minute, then add the sliced mushrooms. Cook until the mushrooms are tender and browned, about 5-7 minutes.

    Combine and Season

    Return the chorizo to the skillet with the mushrooms. Add chopped cilantro, lime juice, salt, and pepper to taste. Stir to combine and heat through for another 2 minutes.

Assemble the Arepas

    Fill the Arepas

    Slice each cooked arepa in half, creating a pocket. Stuff each arepa with the chorizo and mushroom filling.

    Serve

    Serve warm, garnished with additional cilantro and lime wedges if desired.
