    Cook the Pasta

    In a large pot of boiling salted water, add the spaghetti and cook according to package instructions until al dente, stirring occasionally.

    Prepare the Pancetta

    While the pasta cooks, heat a large skillet over medium heat. Add the pancetta and cook until crispy and golden, about 5-7 minutes. Remove from heat and set aside.

    Mix the Sauce

    In a bowl, whisk together the eggs, grated pecorino cheese, and black pepper until well combined. Set aside.

Combining

    Combine Pasta and Pancetta

    Once the spaghetti is cooked, reserve about 1 cup of pasta water and then drain the spaghetti. Quickly add the hot pasta to the skillet with the pancetta. Toss to combine.

    Add the Sauce

    Remove the skillet from the heat, and then immediately pour the egg and cheese mixture over the pasta. Toss quickly to coat the pasta, adding reserved pasta water a little at a time until you reach a creamy consistency.

    Season

    Taste the carbonara and add salt if necessary, remembering that the pancetta and cheese are already salty. Toss to mix well.

    Plate the spaghetti carbonara and garnish with freshly chopped parsley. Serve immediately with additional pecorino cheese and black pepper on the side.
