Panna Cotta Base

Method

Panna Cotta Base Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5-10 minutes until it becomes gelatinous.

    Heat the Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.

    Add Vanilla and Gelatin

    Once the cream mixture is hot, remove it from the heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow to cool at room temperature for about 30 minutes.

    Chill

    Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Berry Sauce Preparation

    Prepare the Berries

    In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

    Cook the Sauce

    Cook over medium heat, stirring gently, until the berries break down and the mixture thickens, about 10-15 minutes.

    Cool the Sauce

    Remove from heat and let the sauce cool before serving. You can strain it if you prefer a smoother sauce.
