Calamari Preparation

Prepare the Calamari
In a mixing bowl, combine cleaned and cut calamari with buttermilk. Let it marinate for about 30 minutes.

Make the Coating
In another bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and garlic powder until well combined.

Coat the Calamari
After marinating, remove calamari from buttermilk and let excess drip off. Dredge the calamari rings in the flour mixture until fully coated. Shake off excess flour.

Heat the Oil
In a heavy-bottomed pot or deep fryer, heat vegetable oil to 375°F (190°C).

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes until golden brown and crispy. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

Add Tomatoes and Spices
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes. Stir to combine.

Simmer the Sauce
Let the sauce simmer on low heat for about 20 minutes, stirring occasionally, until it thickens slightly.

Garnish and Serve
Remove from heat and stir in fresh parsley. Serve warm with fried calamari.
