Preparing the Beef Tenderloin

    Searing the Beef

    Preheat your oven to 400°F (200°C). Heat olive oil in a large oven-safe skillet over medium-high heat. Season the beef tenderloin with salt, pepper, and rosemary. Sear the beef on all sides until browned, about 3-4 minutes per side.

    Roasting the Beef

    Add crushed garlic cloves to the skillet. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from oven and let rest for 10 minutes before slicing.

Making the Frites

    Preparing the Potatoes

    While the beef is resting, peel and cut the russet potatoes into thin strips for frites. Rinse them in cold water and pat them dry with paper towels.

    Frying the Frites

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 4-5 minutes per batch. Drain on paper towels and season with salt.

Making the Bistreto Sauce

    Preparing the Sauce

    In the same skillet used for the beef, melt the butter over medium heat. Add finely chopped shallots and sauté until translucent. Pour in the red wine and beef stock, scraping up any browned bits from the bottom of the skillet. Simmer until reduced by half, about 10 minutes. Stir in thyme and season with salt and pepper to taste.
