Prepare the Grouper
Thinly slice the grouper fillet and arrange the slices on a serving plate.

Prepare the White Asparagus
Blanch the white asparagus in boiling water for 2-3 minutes until tender. Drain and cool under cold water, then pat dry.

Combine Ingredients
Place the blanched asparagus on top of the grouper slices. Sprinkle the toasted pine nuts over the top.

In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Drizzle the dressing over the assembled carpaccio and add small dollops of citrus preserves.
