Preparing the Rack of Lamb

Season the Lamb

Preheat your oven to 400°F (200°C). Rub the rack of lamb with olive oil, minced garlic, fresh rosemary, salt, and black pepper.

Sear the Lamb

In a hot skillet, sear the lamb rack for 2-3 minutes on each side until browned.

Roast the Lamb

Transfer the seared lamb to a roasting pan and roast in the oven for about 20-25 minutes for medium-rare, or until desired doneness.

Making the Douro Wine Sauce

Sauté Shallots

In the same skillet used for the lamb, add chopped shallots and sauté until translucent.

Deglaze with Wine

Pour in the Douro red wine, scraping the bottom of the skillet to release any flavorful bits. Bring to a simmer.

Add Beef Stock

Add beef stock and fresh rosemary. Continue to simmer until the sauce reduces by half.

Finish the Sauce

Whisk in butter, and season with salt and black pepper to taste. Keep warm until ready to serve.
