Quenelles Preparation

Prepare the Salt Cod

Soak the salt cod in water for 24 hours, changing the water several times. Drain and shred the cod.

Cook the Potatoes

Boil the diced potatoes in salted water until tender. Drain and mash the potatoes until smooth.

Combine Ingredients

In a bowl, mix the shredded salt cod, mashed potatoes, egg yolks, heavy cream, melted butter, salt, black pepper, and nutmeg until well combined.

Shape the Quenelles

Using two spoons, shape the mixture into oval dumplings (quenelles) and place them on a tray.

Cook the Quenelles

Bring a pot of salted water to a gentle simmer. Cook the quenelles in the simmering water for about 8-10 minutes until cooked through. Remove and set aside.

Piripiri Aioli Preparation

Make the Aioli

In a bowl, combine mayonnaise, minced garlic, red chili flakes, and lemon juice. Slowly drizzle in the olive oil while whisking until well blended.

Salad Preparation

Prepare the Salad

In a large bowl, combine the frisée lettuce and cooked lupini beans. Drizzle with olive oil and white wine vinegar, then season with salt and black pepper to taste. Toss gently.

Plating

Serve

On a plate, arrange the quenelles, drizzle with piripiri aioli, and serve alongside the frisée and lupini salad.
