    Clean the Sardines

    Rinse the fresh sardines under cold water and pat them dry. Remove the heads and guts if desired, but you can also leave them whole for presentation.

    Prepare the Marinade

    In a bowl, combine the fresh lemon juice, extra virgin olive oil, chopped parsley, minced garlic, salt, and black pepper. Mix well until all ingredients are well incorporated.

    Marinate the Sardines

    Place the cleaned sardines in a shallow dish. Pour the marinade over the sardines, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 30 minutes, preferably 1-2 hours to allow flavors to meld.

Serving

    To serve raw, arrange the marinated sardines on a platter, drizzling some of the marinade over them. For grilled sardines, preheat the grill to medium-high heat, and grill the sardines for about 2-3 minutes on each side until cooked through. Serve immediately with extra lemon wedges and parsley.
