Prepare the Cod
Soak the salted cod fillets in cold water for 24 hours, changing the water several times to remove excess salt.

Preheat the Oven
Preheat your oven to 300°F (150°C).

Prepare the Baking Dish
In a large baking dish, pour in the extra virgin olive oil to coat the bottom evenly.

Add Aromatics
Thinly slice the garlic cloves and scatter them over the olive oil. Add the fresh thyme and lemon slices on top.

Add the Cod
Place the soaked cod fillets in the baking dish, ensuring they are submerged in the olive oil. Season with black pepper.

Roast the Cod
Cover the baking dish with aluminum foil and roast in the preheated oven for about 1 hour, until the cod is tender and flaky.

Serve
Remove from oven and let it rest for a few minutes. Serve warm, drizzled with the infused olive oil from the baking dish.
