Method

Preparing the Lemon Tart Base

    Make the Crust

    In a bowl, mix flour, powdered sugar, and salt. Cut in the butter until crumbly. Stir in egg yolks and vanilla extract. Form a dough, wrap in plastic, and chill for 30 minutes.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the dough and press it into a tart pan. Bake for 15-20 minutes until golden. Let cool.

Making the Lemon Filling

    Prepare the Filling

    In a bowl, whisk together lemon juice, lemon zest, sugar, and eggs until smooth. Stir in heavy cream.

    Bake the Tart

    Pour the filling into the cooled crust and bake for 25-30 minutes until set. Let cool completely.

Preparing the Raspberry Coulis

    Cook the Coulis

    In a saucepan over medium heat, combine raspberries, sugar, and water. Cook until raspberries break down. Strain through a sieve to remove seeds. Cool.

Making the Sponge Toffee

    Cook the Toffee

    In a saucepan, combine sugar and corn syrup. Cook over medium heat, stirring until dissolved. Bring to a boil without stirring until it reaches 300°F (hard crack stage). Remove from heat and quickly stir in baking soda. Pour onto a greased baking sheet and let cool completely.
