Method

Prepare the Leite Creme

    Heat the Milk and Cream

    In a saucepan, combine the milk and heavy cream. Heat over medium heat until steaming, but do not boil.

    Whisk Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks, sugar, cornstarch, and salt until smooth.

    Temper the Egg Mixture

    Gradually pour the hot milk mixture into the egg yolk mixture, whisking constantly to avoid curdling.

    Cook the Mixture

    Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens (about 5-7 minutes). Remove from heat and stir in vanilla extract.

    Cool and Chill

    Pour the mixture into serving dishes and refrigerate for at least 2 hours to set.

Prepare the Butter Cookies

    Preheat the Oven

    Preheat your oven to 180°C (350°F).

    Make the Dough

    In a mixing bowl, beat the butter and sugar together until creamy. Add the egg yolk and vanilla extract, mixing well. Gradually add flour and salt until a dough forms.

    Shape and Bake the Cookies

    Roll the dough into small balls, place them on a baking sheet lined with parchment paper, and flatten slightly. Bake for 10-12 minutes or until lightly golden.
