Shrimp and Marinade
Roasted Peppers
Method
Marinating the Shrimp
- 1
Prepare the Marinade
In a large bowl, combine the piri piri sauce, olive oil, minced garlic, lemon juice, salt, and black pepper. Mix well.
- 2
Marinate the Shrimp
Add the tiger shrimp to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.
Roasting the Peppers
- 3
Prepare the Peppers
Preheat your oven to 400°F (200°C). In a baking dish, combine the sliced jalapenos and banana peppers with olive oil and salt, tossing to coat.
- 4
Roast the Peppers
Place the baking dish in the preheated oven and roast for about 15-20 minutes, or until the peppers are tender and slightly charred.
Grilling the Shrimp
- 5
Preheat the Grill
Prepare your grill for medium-high heat.
- 6
Skewer the Shrimp
Thread the marinated shrimp onto skewers. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- 7
Grill the Shrimp
Place the skewered shrimp on the grill and cook for about 2-3 minutes on each side, or until they are pink and opaque.
Serving
- 8
Serve
Remove the grilled shrimp from the skewers and serve hot alongside the roasted jalapenos and banana peppers.
