    Prepare the Garlic

    Preheat your oven to 375°F (190°C). Peel the garlic cloves and place them in a small baking dish. Drizzle with a little olive oil and roast in the oven for about 20 minutes, or until soft and golden.

    Soak the Cod

    If using salted cod, soak the fillets in cold water for 24 hours, changing the water several times to reduce the saltiness.

    Grill the Cod

    Preheat your grill to medium-high heat. Remove the cod from the water and pat dry. Brush both sides of the fillets with extra virgin olive oil and season with black pepper.

    Cook on the Grill

    Place the cod fillets on the grill. Grill for about 5-7 minutes on each side, or until the fish flakes easily with a fork.

    Prepare the Sauce

    In a blender, combine the roasted garlic, a pinch of salt, and the remaining olive oil. Blend until smooth. Adjust seasoning as needed.

    Serve

    Plate the grilled salted cod, drizzle with the roasted garlic sauce, and garnish with chopped fresh parsley and lemon wedges.
