    Prep the Potatoes

    Wash and peel the Russet potatoes. Cut them into even strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Batch fry the potato strips in the hot oil until golden brown and crispy, about 5-7 minutes per batch. Avoid overcrowding the pot.
