Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

Make the Filling
In a large bowl, beat the cream cheese and sugar together until smooth. Add the sour cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated. Fold in the sliced apples.

Assemble the Cheesecake
Pour the apple filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake for 45-50 minutes or until the center is set and only slightly jiggly. Let it cool completely, then refrigerate for at least 4 hours or overnight.

Prepare the Bourbon Caramel
In a saucepan over medium heat, combine brown sugar and heavy cream. Stir until the mixture comes to a boil. Reduce heat and let simmer for 5 minutes, stirring occasionally. Remove from heat and stir in butter and bourbon until smooth. Let it cool slightly before serving.

Slice the chilled cheesecake and drizzle the bourbon caramel cream over each slice before serving.
