Steak Preparation

    Season the Steak

    Season the beef striploin pieces generously with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a pan over medium-high heat. Once hot, add the striploin and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Rest the Steak

    Remove the steak from the pan and let it rest for 5 minutes before slicing.

Pan Jus Preparation

    Sauté Shallots

    In the same pan used for the steak, add chopped shallots and sauté until translucent.

    Deglaze the Pan

    Pour in red wine and scrape the bottom of the pan to release flavorful bits, simmer for 3-4 minutes.

    Add Beef Stock

    Add beef stock and reduce the mixture for about 10 minutes until slightly thickened. Stir in butter at the end and season to taste.

Fries Preparation

    Prepare Potatoes

    Cut the potatoes into fries and soak them in cold water for 30 minutes, then drain and pat dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-7 minutes. Drain on paper towels and season with salt.

Assembly

    Plate the Dish

    Slice the rested striploin and arrange it on a plate. Drizzle with pan jus and serve alongside the fries.
