Prepare Ravioli Dough

    Make the Dough

    In a large bowl, mix the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare Filling

    Cook Lamb Filling

    In a skillet over medium heat, cook the ground lamb until browned. Add minced garlic and cook for another 2 minutes. Stir in fresh peas, mint, goat cheese, salt, and pepper. Remove from heat and let cool.

Make Lamb Jus

    Prepare Lamb Jus

    In a large pot, combine lamb bones, chopped onion, carrot, celery, water, thyme, and salt. Bring to a boil, then reduce heat and simmer for 2 hours. Strain and reserve the liquid.

Assemble and Cook Ravioli

    Roll and Fill Ravioli

    Roll out the dough into thin sheets. Place small mounds of the filling on one sheet, then cover with another sheet. Cut into squares or circles and seal the edges with a fork.

    Cook Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes or until they float. Remove and drain.

Serve

    Plate the Dish

    Serve the ravioli drizzled with lamb jus. Garnish with additional fresh peas and mint if desired.
