Soak the Croissants
Slice the croissants in half and dip them in the egg mixture, allowing them to soak for a minute on each side.

Cook the Croissants
Heat a skillet over medium heat and melt the butter. Add the soaked croissants and cook until golden brown on both sides, about 3-4 minutes per side.

Mix Dry Ingredients
In a separate bowl, whisk together sugar, cocoa powder, and cornstarch.

Combine Mixtures
Slowly whisk the dry mixture into the hot milk. Continue to whisk until the mixture thickens, about 5 minutes.

Add Chocolate
Remove from heat and stir in the dark chocolate and vanilla extract until smooth. Allow to cool.
Assembly

Assemble the Dish
Layer the fried croissants on a plate, add a generous dollop of chocolate pastry cream on top, and sprinkle with chopped hazelnuts and powdered sugar.
