Prepare the Shrimp

In a large skillet over medium heat, add olive oil. Once hot, add the shrimp, season with salt and black pepper, and sauté for about 3-4 minutes until they turn pink and opaque. Remove from heat and set aside.

Make the Vinaigrette

In a small bowl, whisk together the champagne vinegar, lemon juice, and remaining olive oil. Add chopped dill, and season with salt and pepper to taste.

Combine the Ingredients

In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, and cooked shrimp. Pour the vinaigrette over the top and gently toss to combine well.

Transfer the salad to a serving platter or individual plates. Garnish with additional dill if desired and serve immediately.
