For Steaming Mussels and Shrimp

For Serving

Method

Preparing the Ceviche

1

Make Ceviche Marinade

In a bowl, combine fresh lime juice, chopped red onion, chopped cilantro, finely chopped jalapeño, and salt. Mix well.

2

Prepare the Fish

Cut the fresh fish into small cubes and add to the marinade. Let it sit in the refrigerator for at least 30 minutes to allow the fish to 'cook' in the lime juice.

3

Add Avocado

Just before serving, gently fold in the diced avocado.

Cooking Mussels and Shrimp

4

Prepare for Steaming

In a large pot, add water, minced garlic, and Old Bay seasoning. Bring to a boil.

5

Cook Mussels

Add the mussels to the pot, cover, and steam for about 5-7 minutes until they open.

6

Cook Shrimp

Add the shrimp to the pot during the last 3-4 minutes of cooking until they turn pink and opaque.

Serving the Seafood Tower

7

Plate the Seafood

On a large platter, arrange the steamed mussels, shrimp, half dozen oysters, and ceviche. Garnish with lemon wedges and serve with cocktail sauce.
