Prepare the lentils

Rinse the beluga lentils under cold water. In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes, or until the lentils are tender. Drain any excess liquid if necessary and set aside.

Cook the salmon

While the lentils are cooking, heat olive oil in a skillet over medium-high heat. Season the Ōra King salmon fillets with salt and black pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes, then carefully flip and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

Combine and serve

In a bowl, combine the cooked lentils with chopped parsley and dill. Mix well and adjust seasoning with salt and pepper to taste. Serve the lentil mixture on a plate topped with the salmon fillet. Garnish with lemon slices and additional herbs if desired.
