Preheat the oven to 375°F (190°C). Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside.
2. Make the Filling
In a large bowl, combine ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, chopped spinach, minced garlic, egg, salt, black pepper, and Italian seasoning. Mix until well combined.
3. Stuff the Shells
Take each cooked pasta shell and fill it with the ricotta mixture using a spoon. Place the stuffed shells in a 9x13 inch baking dish.
4. Add Sauce
Pour marinara sauce over the stuffed shells, ensuring they are well-covered. Sprinkle the remaining mozzarella cheese on top.
5. Bake
Cover the baking dish with aluminum foil and bake in preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
