Slice and Salt the Eggplant
Slice the eggplants into 1/2-inch rounds and sprinkle with salt. Let them sit for about 30 minutes to draw out moisture.

Rinse the eggplant slices under cold water to remove the salt. Pat them dry. Dip each slice first in flour, then in the egg, and finally coat with breadcrumbs.

In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices until golden brown on both sides. Drain on paper towels.
