Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed sushi rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, reduce heat, cover, and simmer for 20 minutes until fully cooked.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.

Prepare Spicy Tuna Filling

    Prepare Tuna

    Finely chop the sushi-grade tuna and place it in a bowl.

    Mix Filling

    Add mayonnaise, Sriracha sauce, sesame oil, and chopped green onion to the tuna. Mix until well combined.

Assemble the Rolls

    Prepare Nori

    Place a sheet of nori, shiny side down, on a bamboo sushi mat or clean surface.

    Add Rice

    Wet your hands and take a handful of sushi rice. Spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, place a line of spicy tuna filling, followed by a line of cucumber and avocado slices.

    Roll the Sushi

    Lift the edge of the mat closest to you and roll it over the filling. Apply gentle pressure to form a tight roll. Continue rolling until you reach the border of the nori.

    Seal the Roll

    Dampen the edge of the nori with a little water to seal the roll. Use a sharp knife to slice the roll into 6-8 pieces.

Serve

    Plate the Sushi

    Arrange the sliced rolls on a plate. Serve with wasabi, pickled ginger, and soy sauce on the side.
