Sliders

Spicy Cucumber Chimichurri Aioli

Method

Preparing the Sliders

  1. 1

    Prepare the Tenderloin

Preheat your grill or a skillet over medium-high heat. Season the tenderloin with salt and pepper. Sear the tenderloin on all sides until browned, about 8-10 minutes for medium-rare. Remove from heat and let it rest.

  2. 2

    Bone Marrow Basting

In a small saucepan, melt the bone marrow over low heat. Brush the melted marrow over the tenderloin while it rests, allowing the flavors to infuse.

  3. 3

    Slice the Heirloom Tomatoes

While the meat is resting, slice the heirloom tomatoes into thick rounds and set aside.

  4. 4

    Prepare the Arugula

Wash and dry the arugula thoroughly, then set it aside for assembly.

  5. 5

    Toast Slider Buns

Lightly toast the slider buns on the grill or in a toaster until golden brown.

Making the Spicy Cucumber Chimichurri Aioli

  1. 6

    Prepare the Cucumber

Peel the cucumber and remove the seeds. Chop it finely.

  2. 7

    Mix the Aioli

In a mixing bowl, combine mayonnaise, chopped cucumber, fresh parsley, fresh cilantro, minced garlic, red chili flakes, lemon juice, salt, and pepper. Mix until well combined and adjust seasoning to taste.

Assembling the Sliders

  1. 8

    Slice the Tenderloin

Once the tenderloin has rested, slice it into thin pieces.

  2. 9

    Build the Sliders

On the bottom half of each slider bun, layer arugula, a slice of heirloom tomato, slices of tenderloin, and a generous dollop of spicy cucumber chimichurri aioli. Top with the other half of the bun.

Serving

  1. 10

    Serve and Enjoy

Serve the sliders warm with extra chimichurri aioli on the side for dipping.
