Method

Preparing the Pork Belly

    Season the Pork Belly

    In a small bowl, mix together salt, black pepper, and brown sugar. Rub this mixture evenly over the pork belly, ensuring all sides are coated.

    Marinate

    Place the seasoned pork belly in a resealable plastic bag or a covered dish. Pour the maple syrup over it, seal or cover, and refrigerate for at least 12 hours, or overnight for best flavor.

Cooking the Pork Belly

    Preheat the Oven

    Preheat your oven to 300°F (150°C). This low and slow cooking method will render the fat and create tender bacon.

    Bake the Pork Belly

    Remove the pork belly from the marinade and place it on a wire rack set over a baking sheet. Bake in the preheated oven for 2 to 3 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.

    Once cooked, remove the pork belly from the oven and let it cool to room temperature. Slice it into thin strips to create bacon.

Making the Black Pepper Mustard

    In a bowl, combine Dijon mustard, crushed black peppercorns, maple syrup, and apple cider vinegar. Stir until well mixed.
