Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure the fries cook evenly.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin shoestring fries, approximately 1/8 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps them become crispy.

Drain and Dry
After soaking, drain the fries and pat them dry with a clean towel to remove as much moisture as possible.

Toss with Oil and Seasoning
In a large bowl, combine the dried fries with olive oil, Old Bay seasoning, salt, and black pepper. Toss until the fries are evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden and crispy.
