Method

Crust Preparation

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, sugar, melted butter, and salt. Mix until the crumbs are evenly coated with butter.

  2. 2

    Form the Crust

Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Filling Preparation

  1. 3

    Prepare the Filling

In a mixing bowl, whisk together the egg yolks until they are slightly thickened and pale in color. Gradually add the sweetened condensed milk and continue whisking until smooth.

  2. 4

    Add Lime Juice and Zest

Stir in the key lime juice and lime zest until fully combined. Make sure the mixture is smooth without any lumps.

  3. 5

    Bake the Filling

Pour the filling into the cooled graham cracker crust. Bake in the oven at 350°F (175°C) for about 15 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours to set completely.

Topping Preparation

  1. 6

    Make the Whipped Cream

In a mixing bowl, beat the heavy whipping cream with an electric mixer on medium speed until it begins to thicken. Gradually add the powdered sugar and vanilla extract, then continue to beat until soft peaks form.

  2. 7

    Top the Pie

Once the pie has fully set, spread the whipped cream over the top of the pie evenly. You can decorate with additional lime zest or slices if desired.
