Prepare the Fish

Pat the white fish fillets dry with paper towels. Rub Cajun seasoning evenly over both sides of the fish fillets.

Heat the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side or until pliable. Keep them warm by wrapping in a clean kitchen towel.
Assemble the Tacos

Build the Tacos
On each warm tortilla, layer a generous amount of shredded cabbage, followed by the blackened fish, shredded jack cheese, a spoonful of pico de gallo, and a drizzle of ranch dressing.

Serve the tacos immediately while warm, with additional pico de gallo and ranch dressing on the side if desired.
