Prepare the Fish

    Pat the white fish fillets dry with paper towels. Rub Cajun seasoning evenly over both sides of the fish fillets.

    In a skillet, heat olive oil over medium-high heat. Once hot, add the seasoned fish fillets and cook for about 4-5 minutes on each side, or until the fish is cooked through and blackened. Remove from heat and let it rest for a few minutes before flaking into bite-sized pieces.

Warm the Tortillas

    Heat the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side or until pliable. Keep them warm by wrapping in a clean kitchen towel.

Assemble the Tacos

    Build the Tacos

    On each warm tortilla, layer a generous amount of shredded cabbage, followed by the blackened fish, shredded jack cheese, a spoonful of pico de gallo, and a drizzle of ranch dressing.

    Serve the tacos immediately while warm, with additional pico de gallo and ranch dressing on the side if desired.
