Method
Preparing the Shrimp

Marinate the Shrimp
In a bowl, combine the peeled and deveined shrimp with buttermilk. Let it marinate for at least 30 minutes in the refrigerator.

Prepare the Tempura Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the ice-cold water until combined. The batter should be smooth and slightly thick.
Frying the Shrimp

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Remove the shrimp from the buttermilk and dip them into the tempura batter, allowing any excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Making the Spicy Kim Chee Sauce

Combine Ingredients
In a bowl, mix together the chopped kimchi, mayonnaise, Sriracha sauce, sesame oil, soy sauce, lime juice, and sugar. Stir until well combined.
Serving

Plate the Dish
Arrange the fried shrimp on a serving platter and drizzle generously with the spicy kim chee sauce. Serve immediately.
