    Prepare the Pork Chop

    Season the pork chop with salt and black pepper on both sides.

    Sear the Pork Chop

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the pork chop and sear for about 4-5 minutes on each side until browned and cooked through. Remove from the skillet and let rest.

    Make the Sauce

    In the same skillet, add the remaining tablespoon of butter. Add minced garlic and sauté until fragrant, about 30 seconds. Pour in the Cognac and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.

    Finish the Sauce

    Add the green peppercorns and heavy cream to the skillet. Stir well and let it simmer for another 3-4 minutes until the sauce thickens slightly. Adjust seasoning with salt and black pepper if needed.

    Serve

    Slice the pork chop if desired and pour the Cognac and green peppercorn cream sauce over the top. Garnish with fresh parsley and serve immediately.
