Prepare the Fries

Peel and cut the potatoes into fries. Rinse them under cold water and pat dry. Heat oil in a deep fryer or large pot to 180°C (350°F) and fry the potatoes until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Prepare the Sandwich

Spread Dijon mustard on one side of each slice of sourdough bread. Layer country ham and grated gruyère cheese on two slices, then top with the remaining slices, mustard side down.

Grill the Sandwich

In a skillet, melt butter over medium heat. Add the sandwiches and grill until golden brown on both sides, about 3-4 minutes per side. You may need to press down slightly to ensure even grilling.

Fry the Eggs

In another skillet, melt a little butter and fry the eggs sunny-side up or to your preferred doneness. Season with salt and pepper.

Assemble the Croque Madame

Place the grilled sandwich on a plate, top with the fried egg, and serve with house-cut fries on the side.
