    Prepare the Steak

    Season the skirt steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 3-4 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes, then slice thinly against the grain.

    Poach the Eggs

    In a pot of simmering water, add vinegar. Crack eggs into separate bowls and gently slide them into the water. Poach the eggs for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon and set aside.

    Sauté the Greens

    In the same skillet, add mixed greens and sauté for 2-3 minutes until wilted. Season with a pinch of salt and pepper.

    Toast the English Muffins

    Split the English muffins and toast them until golden brown.

    On each toasted muffin half, layer sautéed greens, slices of steak, and a poached egg. Drizzle with hollandaise sauce and top with onion strings.
