    Prepare the Ribs

    Pat the short ribs dry with paper towels and season them generously with salt and black pepper.

    Sear the Ribs

    In a large skillet, heat olive oil over medium-high heat. Add the short ribs and sear on all sides until browned, about 4-5 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and carrots. Sauté for about 5 minutes until the onion is translucent. Add the minced garlic and cook for an additional minute.

    Deglaze the Pan

    Pour in red wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.

    Combine Ingredients

    In a slow cooker, add the seared short ribs, sautéed vegetables, beef broth, bay leaves, and thyme. Stir to combine.

    Slow Cook

    Cover the slow cooker and cook on low for 6-8 hours or until the ribs are fork-tender.

    Serve

    Remove the bay leaves and serve the short ribs with the cooking liquid spooned over the top.
