Cooking Instructions
- 1
Prepare the Chicken
Preheat your oven to 425°F (220°C). Rinse the whole chicken under cold water and pat it dry with paper towels.
- 2
Season the Chicken
In a small bowl, mix together olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub this mixture all over the chicken, including inside the cavity. Squeeze the lemon juice over the chicken and place the lemon halves inside the cavity along with the fresh rosemary.
- 3
Roast the Chicken
Place the chicken breast-side up on a roasting pan or a baking dish. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the pan juices halfway through cooking.
- 4
Rest and Serve
Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve with your choice of two sides.
